Ingredients
1 tbs walnut oil or olive oil 1 sweet potato (skinned and chopped) 1 apple (chopped) 1/4 onion (chopped) 1 tsp dried thyme 1/2 tsp paprika salt and pepper to taste optional: chopped spinach
Instructions Chop apple, sweet potato and onion. Add oil, sweet potato and spices to pan over medium to low heat and cover. Stirring occasionally to prevent burning. Cook until sweet potatoes are fork tender. Add the apple and onion. Add more oil if needed and cook down. Once all veggies are soft, add in chopped spinach and wilt. DONE!
