Smoked Black Bean and Sweet Potato Casserole with Ground Turkey

Casseroles are the one pot wonder meal that just gets better as leftovers and a are perfect for you next meal prep. Sometimes you can just throw a bunch of yummy ingredients together and magic happens, like in this Smoked Black Bean and Sweet Potato Casserole with Ground Turkey. As usual in CK-fashion, all ingredients are simple and easy to come by. No specialty grocery store needed!
Fresh
1 lb 99/1 ground turkey
1 onion diced
1 bell pepper diced
3 small sweet potatoes cubed
1 can black beans drained and rinsed
1 can fire roasted diced tomatoes drained
1 egg
3/4 cup plain greek yogurt
1/4 cup shredded smoked gouda
3/4 cup shredded mozzarella (preferred: smoked)
1/2 cup coarsely chopped cilantro
Pantry
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper (optional)
EVOO cooking spray
1tbs EVOO (Extra Virgin Olive Oil)
Directions
Preheat Oven to 400 degrees.
Saute onion and bell pepper in EVOO.
Brown Meat
Season with garlic powder, salt and pepper
While meat is cooking; peel and cube sweet potatoes
Combine sweet potatoes to meat and veggies and warm (5 mins Note: They will not be cooked)
In small bowl combine yogurt, egg, gouda, and paprika
In large bowl combine all ingredients including black beans and diced tomatoes
Transfer to 9x11 prepared baking dish
Top with shredded mozzarella and a sprinkle of paprika
Bake 30 mins Covered. Then another 20-30 mins uncovered till potatoes and cheese are browned.
