Think sweet potato casserole with marshmallows on top. That’s the flavor of this sweet potato blondie, but with a bread pudding texture. Its is wonderful! We use Quest Nutrition – Vanilla Milkshake Protein and have yet to try other flavors. We can’t speak for using other protein powders or flavors, but the Quest Vanilla Milkshake is right on point!

Servings: 6 rectangles
- 3 cups baked sweet potato
- 2 whole eggs
- 1 tsp cinnamon
- 1/4 tsp kosher salt
- 1/4 cup unsweetened vanilla almond milk
- 2 scoops of Quest Nutrition Vanilla Milkshake Protein
Preheat oven to 375 degrees. Combine sweet potatoes, almond milk, eggs, salt, cinnamon in blender. Blend until smooth. Then stir in protein powder.
Use cooking spray in an 8″X8″ baking dish. Then pour in mixture.
Bake for about 25-30 minutes!
