Eating out in Tupelo!

Eating on the go can seem daunting if you want to eat even semi-healthy. There are so many temptations on a menu, you can get distracted!

As a general rule when going out to eat, if I want to stay on track, I try to eat low-carb.

Not that I think carbs are bad, nor do I cut them out of my daily diet, but I like to know what is in my meal if I am going to truly make a good decision.

Here’s why:

Restaurants cook with lots of fat because fat makes things taste delicious. So what you might think as being a “healthy rice” side, could turn into a calorie bomb because it is cooked with fat, paired with your buttery fish and veggies.

You could ask for the food to be prepared without oil or butter, but again personally, that just makes for a miserable time eating out. (Fats taste so good!) You might as well have cooked at home. But feel free to ask if you find yourself eating out a lot. No harm in asking!

How to enjoy your restaurant meal without thinking you completely blew it…

…or trying to order a complicated meal, just stick to my simple rule— pass on the heavy carbs and order extra veggies. I do this every where and most places are happy to accommodate a substitution.

And though we think these are helpful to get an idea of how to order at any restaurant or city, we thought we would expand our reach and into other cities!

Blueberry Chicken Salad

Chicken salad is a CK staple recipe. We have quite a few! Chicken salad is the perfect, fast meal prep and easy to take on the go meal that fills all the CK meal habits. Needless to say, we are big fans of chicken salad!

Blueberry Balsamic + Rosemary Olive Oil from J. Olive Co. gives chicken salad a new twist and we think it is absolutely delicious!

But this chicken salad was what I call a “happy accident.” My happy accidents usually happen when I completely bomb an original idea for a recipe, but then out of the ashes I become inspired to salvage it.

Originally I planned to do a marinated, bone-in spilt chicken breast with blueberry balsamic, rosemary oil, salt, garlic cloves, and fresh rosemary. I thought it would turn out fantastic, but it ended up being under seasoned. So instead of wasting the chicken, I thought it would be good to add more seasoning and “things” for a chicken salad. And wholah! Blueberry chicken salad was born!

And I think you are going to love it. I know I do!

Espresso Balsamic + Harissa Olive Oil

This combo = FLAVOR BOMB. Maybe it’s because I made so many different meal ideas using the same ingredients, but came out with 3 different flavors. I did a sweet bite, Korean-inspired Bibimbap, and American BBQ—the sauuuuuuuce and I gave you 3 different uses for just the sauce! You will get a lot of use out of this combo. The J. Olive Co. Espresso Balsamic reminds me a lot of a deep chocolate flavor and the J. Olive Co. Harissa Olive Oil (new flavor!) has a smokey, but not too hot kick. The Harissa could be subbed out for Chipotle (smokey and mild) or the Baklouti (extremely hot). This combo is perfect for savory or sweet recipes and I have served you up with both! Let’s begin.

We will start with a dessert of sorts…

Walnut Butter and Apples

This is so simple I can’t believe I have never tried other nut butters. Honestly, this could work with many other J. Olive Co. dark balsamics! I used walnuts just because of the healthy Omega-3 essential fats it offers. Check out a quick video on how I made the walnut butter!

Pomegranate Balsamic + Blood Orange Olive Oil

J. Olive Co. has some amazing flavor combinations, but this is probably my number one so far. The past couple of weeks I have been addicted to this stuff! I have 3 different ways I used the Pomegranate Balsamic and Blood Orange Olive Oil combo.

The J. Olive Co. Pomegranate Balsamic has a sweet, fruity flavor and the Blood Orange Olive Oil gives a citrus kick. So fresh and so yummy, I could literally eat an entire container of fruit saturated in this stuff. My favorite quick snack is pouring the Pomegranate Balsamic Vinegar and the Blood Orange Olive Oil over some red grapes and cantaloupe!

Fruit Salad Bowl

I made this as a single serving and as a large batch for a family party the other weekend. This couldn’t be easier! You could use any of your favorite berries, apples, melons, oranges, anything and it would be delicious. Here is what I used. And I bought all pre-chopped fruit to save a step!

Blue Cheese Turkey Burger Salad

The burger bowl is a classic CK meal and our turkey burger recipe. Turkey burgers are one of the most convenient protein preps out there. Make a huge batch and freeze them individually to use later. This is a fast lunch or dinner idea that will come together in minutes.

  • CK Turkey Burger (CK Cookbook)
  • 1 tbs reduced fat blue cheese
  • handful of chopped grapes
  • 2 handfuls of chopped spinach
  • Drizzle of J. Olive Co. Pomegranate Balsamic for the dressing.

Next up is hands-down next-level flavor-bomb. And if you already loved the CK Protein Fruit Dip, well, I will take your obsession overboard with this one. This is your fix for any ice cream-cheesecake-pudding-craving you are having. This would be a perfect dessert for a brunch or shower as well.

CK Protein Parfait 

CK Protein Fruit Dip combined with J. Olive Co. Pomegranate Balsamic and Blood Orange Olive Oil.

  • In a food processor combine and mix together:
  • 1 cup measured of low fat cottage cheese
  • 1/2 scoop Quest Vanilla Milkshake Protein Powder
  • 1 tsp J. Olive Co. Blood Orange Olive Oil

Assemble your parfait with Fruit Dip and fruit of choice. We used red grapes and blueberries here. You could also add in some walnuts or almonds for a crunch!

Drizzle with J. Olive Co. Pomegranate Balsamic Vinegar.
