Cauliflower Rice or Grits

To make “rice” or “grits” is pretty much the same process. First we will start with cauliflower rice. Then to make them “grits” you can just start adding in extra ingredients to make them creamier.

Cook time: 5 minutes

Cauliflower “Rice”

Ingredients

  • A pot
  • 1 head or bag of cauliflower
  • Food Processor

Directions:

  1. Crumble cauliflower in the food processor. I use the bagged crumbled cauliflower when I can, then pulse it a few times in the food processor to make in a finer crumble.
  2. Add to a sauce pot over medium heat. Let cook for about 5 minutes, kind of like steaming the cauliflower. From there you can season it however you would like. The cauliflower rice is your canvas.

Cauliflower Creamy Dreamy “Grits”

This is perfect to to pair with the Spicy Shrimp and Sausage recipe!

Ingredients

Fresh

  • 1 head or bag of cauliflower
  • 1/2 cup of whipped cottage cheese
  • 1/4 cup grated parmesean cheese

Pantry

  • 1 tbs ghee or butter
  • 3-4 tbs chicken stock
  • 1/4 tsp garlic powder
  • salt to taste

Directions:

  1. Crumble cauliflower in the food processor. I use the bagged crumbled cauliflower when I can, then pulse it a few times in the food processor to make in a finer crumble.
  2. Add to a sauce pot over medium heat. Let cook for about 5 minutes, kind of like steaming the cauliflower.
  3. While cauliflower is cooking, whip up 1 cup measured of cottage cheese, reserve half for your grits. In a larger food processor the cottage cheese will whip better with more in it.
  4. To your grits add your cheeses, seasonings and stock to desired consistency. Remove from heat and enjoy!

Tip: Create a cauli-mash by blending the entire mixture again in the food processor.
